I purchased a used be 7800 Kubota tractor with a belly mower .When mowing the middle cuts higher than both sides I did try sharpening the blades but I’m not for sure at what angle the blade should be sharpened out for the best results.

I think it sounds like yoou may need to check the settings on the deck. The deck usually has a decal that tells yoou how to set all of the adjusting points. Make sure the rear guide wheel is set correctly. Also if you just mounted the deck, the front attachment can be a bit finicky to do.
As to blades they really just need to be consistent rather than sharp. If they are too blunt the grass will show split ends when it dries. Also there is a positioning pattern that needs to be followed when installing the blades after sharpening. Do you have the pattern? ....

I just looked at mine and can see that it would be possible to install one upside down changing the cut height. Maybe check that? ....

Kubota Mower Deck Blade sharpening instructions. You can see they mostly want you to get rid of a cracked blade, and grind irregular blades to make them even . ....

I have the Kubota Mid mount deck and if I let the grass get too tall before cutting I get uneven results due to the wheels bending the grass before the deck cuts the grass. The dual mid gauge wheels also seem to create the high middle symtom you describe. Cutting a second time in a new direction fixes it. ....
