I own a 1987 John Deere Gator AMT 600 with a 8 H.P. Kawasaki engine that I am completely restoring. Can someone tell me the spark plug gap setting for this engine as I need to replace the existing plug?

From the Technical Manual for the AMT 600:
0.64 mm (0.025 in.)

I dropped the cash and picked a Manual off of ebay. I am just starting my restoration but I think its going to be totally worth it. ....
