I know that the HP and torque ratings are at a specified rpm. Are the hydro pumps for FEL/HSD going to run better in a specific range of rpm as well?
Obviously don't want to run at max rpm all the time and don't want to under rpm it either.
50% of max, 75% of max?

You can get your engines performance curve from the Kubotaengine website. They have the curves for all the engines posted there. The maximum torque rating of the engine will be on the curve. For breakin, run at least at the maximum torque rating rpm of the engine. This will allow proper performance of the hydraulics, just a little slower than at higher rpm's.
From your other posts, it looks like your tractor is new. It was recommended to me not to run over 2000 rpms until after the break-in period. This is above the maximum torque rating rpm, and offers pretty smooth performance. I would suggest that maiximum rpm is only needed for operations such as mowing, where blade speed is important for the quality of cut. ....

Pumps have a rated rpm range but the ranges are pretty liberal and I don't imagine there'd be a problem with low end rating of most pumps. There was some discussion whether heavy hydraulic work at very low rpm could over-heat the oil so maybe there are a few issues.
In practice, the issue doesn't come up for me because if get impatient waiting for my loader to dump at low rpm so I tend to run at around 75% rpm except for pto operations. In addition, diesels like to work. If I chug around a low rpm for a few weeks the engine starts puffing a bit of smoke until I give it some heavy work to do. ....
