Changing Oil on Yanmar Engine

My dipstick shows full after adding only 2 quarts. I did a full oil change and added 3 quarts of oil. checked and it shows overfull. The book says 4.75 quarts of oil. I did a full drain added oil at 3 quarts - it shows over full. The book shows 4.75 - what would you suggest?

When I change oil on a car or a tractor, I really never try to put in a specific number of quarts. Rather I go by the dipstick on level ground to indicate that it is full. Assume you changed the oil filter and you do need to run the engine to fill it and then measure the level. ....
