Looking to switch my '89 Toyota Pickup from Manual to Automatic. Any idea of cost and all the work required, and if its even possible?

As an Engineer I can tell you that NOTHING is IMPOSSIBLE, somethings may be prohibitively expensive for you, but not impossible.

Having said that, going from a manual to an auto. is relatively easy since it is far easier to rig up a shifter than it is to try to get the clutch mechanism worked out. In fact cable shifters make it even easier since they can be mounted almost anywhere. The easiest is to go to a wreckers and cut out what you need from a wrecked auto. of the same model and vintage.

Most automatics do NOT have the hardware or mounting points for the clutch, so it can be tricky and frustrating to fabricate it from scratch.

Best of luck. ....

Why? Too $$$ to be practicle if done right. Just fix the manual or trade for an auto truck. ....
